Fresh Ricotta with Charred Ramp Romesco

 A light, summery appetizer that is ready in minutes

Ingredients:

  • 1 jar (8 oz.) of Family Meal Foods Charred Ramp Romesco
  • 1 pint whole milk ricotta (feel free to substitute part-skim ricotta, or if you are really adventurous, you can make your own. The extra effort is worth it! A great recipe from Epicurious is here.)
  • 1 loaf of country bread or another crusty bread
  • 8 Campari tomatoes
  • 4 fl. oz. Extra Virgin Olive Oil (flavors such as basil or lemon are great to use here)
  • 1 small bunch of basil
  • Salt & pepper to taste

 

 

 Directions:

  1. On an appetizer-size plate, place a heaping tablespoon of Family Meal Foods Charred Ramp Romesco in the center of the plate.
  2. With your spoon, spread the sauce using a circular motion so it covers most of the plate.
  3. Take ½ cup of ricotta cheese and place it on top of the romesco so it covers part of the romesco but does not hide it completely.
  4. Slice two tomatoes and place them to the side of the sauce and cheese.
  5. Drizzle 1 fl. oz. of olive oil over the cheese and tomatoes.
  6. Slice your bread in ½ inch slices. Toast or grill 2-3 slices and place them on the plate opposite the tomatoes.
  7. Roughly chop the basil and sprinkle approximately two pinches around the plate.
  8. Sprinkle salt & pepper to taste.
  9. Enjoy!
