Penne Romesco Primavera

A quick and delicious vegetarian meal that will make everyone happy

 * note: you can use any fresh, local vegetables in this dish!

** another note: add shrimp if you'd like! Just add them to the pan at the same time as the vegetables. 






  1. Rinse vegetables.
  2. Slice yellow squash in half lengthwise and then into ¼ inch slices.
  3. In a 3 quart pan, add olive oil and all vegetables (and shrimp). Cook on medium heat, stirring regularly.
  4. When vegetables are cooked through and pasta is done cooking, drain pasta and add to vegetable pot.
  5. Stir in between ½ and 1 jar of Charred Ramp Romesco to taste and serve.
  6. Optional garnish: shaved Parmesan cheese, red pepper flakes, parsley. In the photo, pasta is garnished with sumac, which has a bright lemony flavor.
