Grilled Veggie Sandwich with Charred Ramp Romesco

 A quick, crowd pleasing, sandwich for any time of year.

  1. Light a grill or use a grill pan on a stove, bring to medium-high heat (approx 400°F on a grill, 8/10 on stove).
  2. Place your red pepper on direct heat - either place on the grill or directly on the stove-top flame - until the skin completely chars.
  3. Under cold water, using your fingers brush off the pepper's skin, remove stem and seeds.
  4. Slice all other vegetables in ¼ inch lengthwise slices.
  5. Brush vegetable slices with olive oil and sprinkle with salt and pepper.
  6. Grill all vegetables until they are tender, show grill marks, and are slightly translucent (approx 7-10 minutes).
  7. Spread a spoonful of Family Meal Foods Charred Ramp Romesco on both sides of each Ciabatta roll.
  8. Layer vegetables and top with a slice of fresh mozzarella.
  9. Place completed sandwich back on grill or grill pan, using some sort of weight or spatula, keep sandwich pressed until cheese melts. Slice in half and serve.
  10. Enjoy!
